Chocolate Chia Pudding Parfait

A parfait is a layered sweet dessert and this chia pudding recipe with Chocolate Shakeology definitely fits the bill.

You could make this recipe as a shake or smoothie bowl, but taking the extra (small) step of layering the ingredients really elevates it into a delightful dessert or snack.

It may look like a luxurious indulgence, but this Chocolate Chia Pudding Parfait is so easy to put together. All you need is five ingredients, five minutes of prep, and an hour to chill.

Chocolate Chia Pudding Parfait

Ingredients

1 cup / 240 ml unsweetened almond milk

1 scoop Chocolate Whey or Chocolate Plant-Based Vegan Shakeology

2 Tbsp. chia seeds

½ cup / 125 g reduced-fat (0–2%) plain Greek yogurt

½ cup / 75 g fresh blueberries

Instructions

Add almond milk, Shakeology, and chia seeds to a 16-oz. (450-ml) jar (or sealable container); stir until well mixed and no lumps remain. Seal jar.
Refrigerate at least 1 hour (or overnight).
Layer with yogurt and blueberries just before serving.
Store refrigerated in an airtight container for up to 24 hours.
